Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix flour and sugar; cut in cold butter until crumbly.
- Press the mixture into mini tartlet pans evenly and prick with a fork. Bake for 15 minutes until golden brown; let cool.
- For the filling, whisk eggs, sugar, lemon juice, and zest in a saucepan over medium heat until thickened.
- Fill cooled shells with lemon curd and let set at room temperature before chilling.
- Garnish with whipped cream or fresh berries before serving.
