  • 1 lb lean ground beef
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • ½ cup salsa
  • ½ cup sour cream
  • 1 jalapeño, sliced (fresh or pickled)
  • 2 green onions, chopped
  • Cilantro (optional)

Instructions

  1. In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and stir in taco seasoning if desired.
  2. Add black beans and salsa to the beef mixture; simmer for 5 minutes.
  3. Spread tortilla chips on a large baking sheet. Layer the beef mixture evenly over the chips, then sprinkle shredded cheese generously on top.
  4. Preheat the oven to 350°F (175°C). Bake for 10-15 minutes until cheese is melted and bubbly.
  5. Remove from oven and add jalapeños, green onions, and dollops of sour cream. Serve immediately.
