- 8 oz tortilla chips
- 1 lb lean ground beef
- 2 cups shredded cheddar cheese
- 1 can (15 oz) black beans, rinsed and drained
- ½ cup salsa
- ½ cup sour cream
- 1 jalapeño, sliced (fresh or pickled)
- 2 green onions, chopped
- Cilantro (optional)
Instructions
- In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and stir in taco seasoning if desired.
- Add black beans and salsa to the beef mixture; simmer for 5 minutes.
- Spread tortilla chips on a large baking sheet. Layer the beef mixture evenly over the chips, then sprinkle shredded cheese generously on top.
- Preheat the oven to 350°F (175°C). Bake for 10-15 minutes until cheese is melted and bubbly.
- Remove from oven and add jalapeños, green onions, and dollops of sour cream. Serve immediately.
