  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 2 ripe tomatoes, diced (or 1 can diced tomatoes)
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prep the vegetables by dicing the onion, bell peppers, and tomatoes into small pieces. Mince the garlic.
  2. In a large skillet, heat the olive oil over medium heat until shimmering. Add the onions and bell peppers; sauté for about 5 minutes until softened.

  4. Season with salt and pepper to taste, adjusting as needed.
