- 1 large yellow onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 4 cloves garlic, minced
- 2 ripe tomatoes, diced (or 1 can diced tomatoes)
- 1/4 cup fresh cilantro or parsley, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Prep the vegetables by dicing the onion, bell peppers, and tomatoes into small pieces. Mince the garlic.
- In a large skillet, heat the olive oil over medium heat until shimmering. Add the onions and bell peppers; sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for another 30 seconds until fragrant. Add the diced tomatoes and simmer for 5-7 minutes.
- Season with salt and pepper to taste, adjusting as needed.
- In the last minute of cooking, stir in the chopped cilantro or parsley.
