  • 4 bell peppers (red or yellow)
  • 23 cups shredded boneless skinless chicken breasts
  • 1/2 cup buffalo sauce
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 2 green onions (chopped)
  • Olive oil
  • Garlic powder
  • Onion powder

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut tops off bell peppers, remove seeds, and drizzle with olive oil. Place cut-side up in a baking dish and sprinkle with salt.
  3. In a bowl, mix shredded chicken, buffalo sauce, cream cheese, garlic powder, onion powder, and half of the shredded cheese until combined.
  4. Generously stuff each pepper with the chicken mixture.
  5. Top with remaining shredded cheese and sprinkle with chopped green onions.
  6. Bake for 25-30 minutes until cheese is melted and bubbly.
