Ingredients
- 4 medium-sized sweet potatoes
- 2 tablespoons olive oil
- 1 can (15 oz) black beans, rinsed
- 1 cup shredded cheddar cheese
- ½ cup Greek yogurt or sour cream
- ¼ cup chopped green onions
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly, pat dry, pierce with a fork, rub with olive oil, and place on a baking sheet.
- Bake for 45-60 minutes until tender when pierced with a fork.
- While baking, prepare toppings: rinse black beans and chop green onions; shred cheese if needed.
- Once cooked, cut potatoes lengthwise and fluff the insides. Add black beans, cheese, Greek yogurt or sour cream, and green onions.
- Serve warm for maximum flavor!
