- 1 prime rib roast (5–7 pounds)
- 2 tbsp kosher salt
- 1 tbsp freshly ground black pepper
- 6 garlic cloves, smashed
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 3 tbsp olive oil
Instructions
- Preheat oven to 450°F (230°C).
- Pat the prime rib roast dry and rub olive oil on all sides.
- Generously season with salt and black pepper.
- Scatter smashed garlic and chopped herbs around the roast in a roasting pan.
- Roast at 450°F for 20 minutes, then reduce to 325°F (165°C) and continue cooking until desired doneness (1-1.5 hours).
- Allow the roast to rest for at least 20 minutes before slicing.
