Instructions
- Prepare the Marinade: In a bowl, whisk together olive oil, crushed garlic, balsamic vinegar, Dijon mustard, salt, and pepper.
- Marinate the Rack of Lamb: Coat the lamb with the marinade. Wrap in plastic wrap or place in a sealed bag. Refrigerate for at least one hour or overnight for best flavor.
- Preheat Oven: Set your oven to 400°F (200°C).
- Sear the Lamb: Heat an oven-safe skillet over medium-high heat and sear the marinated rack for about 2-3 minutes on each side until golden brown.
- Roast: Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the internal temperature reaches 130°F (54°C).
- Rest Before Serving: Remove from oven and let rest for about 10 minutes before slicing into chops.
