- 2 lbs Yukon Gold or Russet potatoes
- 4 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 2 tbsp fresh rosemary or thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the potatoes if preferred; cut them into evenly-sized chunks.
- In a large bowl, toss potato chunks with olive oil, minced garlic, salt, pepper, and chopped herbs until well-coated.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Roast for 30-35 minutes, flipping halfway through until golden brown and fork-tender.
- Serve hot and enjoy!
