- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 2 cups broccoli florets (fresh or frozen)
- 1 cup orzo pasta
- 3 cups low-sodium chicken broth
- 4 oz cream cheese
- 1 cup shredded sharp cheddar cheese
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- In a large skillet over medium heat, add olive oil and sauté diced chicken breasts seasoned with salt and pepper until golden brown (6-8 minutes).
- Stir in minced garlic and cook until fragrant (about 1 minute).
- Add orzo pasta and broccoli florets; stir well to coat the pasta in chicken juices.
- Gradually pour in chicken broth while stirring; bring to a boil then reduce heat to low. Simmer until orzo is al dente (10-12 minutes).
- Lower heat further and add cream cheese and cheddar cheese; stir until melted and creamy.
- Taste and adjust seasoning with salt and pepper before serving hot.
