Instructions
- Preheat the oven to 375°F (190°C) and spray a muffin tin with nonstick cooking spray.
- In a bowl, whisk together the eggs and milk until frothy.
- Stir in chopped spinach, halved cherry tomatoes, and crumbled feta until well combined.
- Season with salt and pepper to taste.
- Pour the mixture into the muffin tin, filling each cup about three-quarters full.
- Bake for 20-25 minutes until golden brown and puffed up.
- Let cool briefly before transferring to a wire rack.
