- 2 medium cucumbers, thinly sliced
- 1 ripe avocado, cubed
- 1 large carrot, julienned
- 2 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 2 green onions, chopped
- 1 tbsp sesame seeds
Instructions
- Wash and slice the cucumbers into thin rounds.
- Julienne the carrot and cube the avocado.
- In a small bowl, whisk together rice vinegar and sesame oil.
- In a large bowl, combine cucumbers, carrots, avocado, and green onions. Drizzle with dressing and toss gently.
- Sprinkle sesame seeds on top and chill in the fridge for 15-20 minutes before serving.
