Ingredients
- 4 cups fresh celery, chopped
- 1 cup cherry tomatoes, halved
- 1 medium English cucumber, thinly sliced
- 1/4 cup red onion, finely chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
- 2 tbsp chopped parsley or dill (optional)
Instructions
- 1. Wash and chop the vegetables: celery into bite-sized pieces, halved cherry tomatoes, thinly slice cucumber, and finely chop red onion.
- 2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
- 3. In a large bowl, combine all chopped veggies. Pour the dressing over the top and toss gently until everything is coated.
- 4. If using herbs, sprinkle them over the salad and toss lightly again.
- 5. Chill in the fridge for at least 15 minutes before serving to allow flavors to meld.
