- 4 cups cucumbers, peeled and seeded (about 3 medium)
 - 1 cup full-fat Greek yogurt
 - 2 cloves garlic, minced
 - 1/4 cup fresh dill, chopped
 - 2 tbsp freshly squeezed lemon juice
 - Salt and pepper to taste
 - 1 tbsp olive oil (for garnish)
 
Instructions
- Wash cucumbers thoroughly, slice in half lengthwise, and scoop out seeds.
 - In a blender, combine cucumbers, garlic, Greek yogurt, dill, lemon juice, salt, and pepper. Blend until smooth.
 - Taste and adjust seasoning if needed.
 - Chill the mixture in the refrigerator for at least 30 minutes.
 - Serve in bowls with a drizzle of olive oil on top and optional garnishes like extra dill or croutons.
