- 2 cups cucumbers (sliced)
- 1 cup ripe avocados (diced)
- 1/4 cup red onion (thinly sliced)
- 1 cup cherry tomatoes (halved)
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- Salt & pepper to taste
Instructions
- Wash all produce thoroughly. Slice cucumbers into half-moons and dice avocados.
- In a large mixing bowl, combine the cucumbers, avocados, red onion, and cherry tomatoes.
- Squeeze fresh lime juice over the mixture, drizzle with olive oil, and season with salt and pepper.
- Gently mix using two spoons or your hands to avoid mashing the avocados.
- Chill in the fridge for about 15 minutes before serving to allow flavors to meld.
