Ingredients

  • 2 cups cucumbers (sliced)
  • 1 cup ripe avocados (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Wash all produce thoroughly. Slice cucumbers into half-moons and dice avocados.
  2. In a large mixing bowl, combine the cucumbers, avocados, red onion, and cherry tomatoes.
  3. Squeeze fresh lime juice over the mixture, drizzle with olive oil, and season with salt and pepper.
  4. Gently mix using two spoons or your hands to avoid mashing the avocados.
  5. Chill in the fridge for about 15 minutes before serving to allow flavors to meld.
