- 2 firm cucumbers, thinly sliced
- 2 ripe avocados, cubed
- 1 cup cherry tomatoes, halved
- 3 tbsp freshly squeezed lime juice
- 1/4 small red onion, finely chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Fresh herbs (cilantro or parsley) – optional
Instructions
- Wash and thinly slice the cucumbers. If using standard cucumbers, peel them if desired.
- Halve the avocados, remove the pits, and scoop out the flesh into cubes. Drizzle with lime juice to prevent browning.
- Slice cherry tomatoes in half and finely chop red onion.
- In a large bowl, combine cucumbers, avocados, cherry tomatoes, and red onion gently.
- Drizzle with olive oil and lime juice; season with salt and pepper. Toss lightly to combine.
- Serve immediately for optimal freshness.
