  • 2 firm cucumbers, thinly sliced
  • 2 ripe avocados, cubed
  • 1 cup cherry tomatoes, halved
  • 3 tbsp freshly squeezed lime juice
  • 1/4 small red onion, finely chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh herbs (cilantro or parsley) – optional

Instructions

  1. Wash and thinly slice the cucumbers. If using standard cucumbers, peel them if desired.
  2. Halve the avocados, remove the pits, and scoop out the flesh into cubes. Drizzle with lime juice to prevent browning.
  3. Slice cherry tomatoes in half and finely chop red onion.
  4. In a large bowl, combine cucumbers, avocados, cherry tomatoes, and red onion gently.
  5. Drizzle with olive oil and lime juice; season with salt and pepper. Toss lightly to combine.
  6. Serve immediately for optimal freshness.
