- 1 cup full-fat Greek yogurt
 - 1 medium English cucumber (diced)
 - ¼ cup fresh mint leaves (minced)
 - 2 tbsp freshly squeezed lemon juice
 - ½ tsp salt
 - ¼ tsp freshly ground black pepper
 
Instructions
- Wash the cucumber thoroughly. Peel if desired, then dice into small cubes.
 - Mince the fresh mint leaves finely to release their oils.
 - In a medium bowl, combine Greek yogurt, diced cucumber, minced mint, lemon juice, salt, and pepper. Gently fold until well mixed.
 - Taste and adjust seasoning if necessary.
 - Cover and chill in the refrigerator for at least 30 minutes to enhance flavor.
 - Serve with veggie sticks or pita chips and enjoy!
