  • 1 medium English cucumber (sliced into half-moons)
  • 1 small red onion (thinly sliced)
  • 1 cup high-quality feta cheese (crumbled)
  • 1/2 cup Kalamata olives (pitted)
  • 2 tbsp fresh oregano (chopped)
  • 4 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (optional)

Instructions

  1. Wash the tomatoes and cucumber thoroughly; dice the tomatoes and slice the cucumber.
  2. Thinly slice the red onion into rings or half-moons.
  3. In a large bowl, combine the diced tomatoes, cucumber, onion, crumbled feta cheese, and Kalamata olives.
  4. Add the chopped oregano and drizzle with olive oil and balsamic vinegar if desired.
  5. Gently toss all ingredients together until well combined.
  6. Serve immediately or chill for enhanced flavors.
