Ingredients

  • 1 cup pearled farro
  • 1 lb fresh green beans
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp dried oregano
  • Salt to taste

Instructions

  1. In a medium saucepan, bring 4 cups of salted water to boil. Add 1 cup of farro and cook until tender (25-30 minutes). Drain excess water and set aside.
  2. In another pot of boiling salted water, add 1 lb of green beans. Blanch for 3-4 minutes until bright green but crisp. Transfer to an ice bath immediately.
  3. In a large bowl, mix cooked farro, drained green beans, halved cherry tomatoes, diced red onion, and crumbled feta cheese.
  4. Whisk together 1/4 cup olive oil, lemon juice, salt, and oregano in a small bowl.
  5. Pour dressing over the salad mixture and toss gently until well combined. Let sit for 15 minutes before serving.
