Ingredients
- 8 oz capellini pasta
- 2 medium fresh lemons (zest and juice)
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (diced)
- 4 tbsp extra virgin olive oil
- ½ cup fresh basil leaves (torn)
- Salt & pepper to taste
Instructions
- Cook the capellini pasta according to package instructions until al dente, about 3-4 minutes. Drain and set aside.
- In a large bowl, whisk together lemon juice, zest, olive oil, salt, and pepper.
- Add the warm capellini to the bowl along with cherry tomatoes and cucumber. Toss gently until well combined.
- Stir in torn basil leaves and adjust consistency with reserved pasta water if needed.
- Serve immediately or refrigerate for 15-30 minutes for a chilled option.
