Ingredients
- 8 oz capellini pasta
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/3 cup olive oil
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/2 cup fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Cook the capellini in a large pot of salted boiling water for 3-4 minutes until al dente. Drain and rinse under cold water.
- In a small bowl, whisk together the lemon juice and olive oil until combined.
- In a large mixing bowl, combine the cherry tomatoes, cucumber, and basil.
- Gently fold in the cooled capellini and drizzle with the dressing. Toss to coat evenly.
- Season with salt and pepper to taste. Let sit for at least 30 minutes before serving.
