- 4 cups fresh spinach
- 2 medium ripe peaches, sliced
- ½ cup crumbled feta cheese
- ½ cup toasted pecans
- 3 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Wash spinach thoroughly and dry using a salad spinner. Slice peaches into wedges.
- In a bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper until smooth.
- In a large bowl, combine spinach, peach slices, feta cheese, and toasted pecans.
- Drizzle the dressing over the salad just before serving and toss gently to coat.
- Serve immediately on individual plates or family-style in a large bowl.
