- 1 baguette, sliced

Instructions
- Melt butter in a large pot over medium heat. Add sliced onions and cook, stirring frequently, until golden brown (about 30 minutes).
- Pour in the white wine and scrape the bottom of the pot; simmer for 5 minutes.
- Add beef broth and thyme, bringing to a gentle boil before reducing heat to simmer for an additional 20 minutes.
- Preheat the broiler. Lightly toast baguette slices until golden brown.
- Ladle soup into oven-safe bowls, top with baguette slices, and sprinkle generously with Gruyère cheese. Broil for 3-5 minutes until bubbly and golden.
