- 1 lb beef tips (sirloin or chuck)
- 1 cup long-grain white or brown rice
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 cups low-sodium beef broth
- 2 tbsp cornstarch
- Salt and pepper to taste
- Fresh thyme or rosemary (optional)
Instructions
- Gather all ingredients. Dice onion and mince garlic.
- In a large skillet, heat a splash of oil over medium heat. Add beef tips and sear until browned on all sides (about 5-7 minutes).
- Add onions and garlic to the skillet; stir until onions are translucent (about 3-4 minutes).
- Pour in beef broth, scraping any bits off the pan bottom. Simmer for about 10 minutes.
- Mix cornstarch with cold water until smooth; stir into the skillet to thicken the gravy.
- While gravy thickens, cook rice according to package instructions (15-20 minutes).
- Serve beef tips over fluffy rice and enjoy!
