  • 12 oz Andouille sausage (sliced)
  • 2 tsp Cajun seasoning
  • 2 bay leaves
  • 4 cups low-sodium chicken broth
  • 1 cup long-grain white rice
  • Hot sauce (optional)

Instructions

  1. Soak the red beans overnight in water.
  2. In a large pot over medium heat, sauté onion, bell pepper, celery, and garlic in a little oil until soft, about 5 minutes.
  3. Add sliced sausage, Cajun seasoning, and bay leaves; cook until sausage starts to brown.
  4. Stir in soaked beans and chicken broth. Bring to a simmer.
  5. Reduce heat and let it simmer for 1 to 1.5 hours until beans are tender; stir occasionally.
