- 1 cup dried red beans (soaked overnight)
- 1 medium sweet onion (finely chopped)
- 1 green bell pepper (diced)
- 2 stalks celery (diced)
- 4 cloves garlic (minced)
- 12 oz Andouille sausage (sliced)
- 2 tsp Cajun seasoning
- 2 bay leaves
- 4 cups low-sodium chicken broth
- 1 cup long-grain white rice
- Hot sauce (optional)
Instructions
- Soak the red beans overnight in water.
- In a large pot over medium heat, sauté onion, bell pepper, celery, and garlic in a little oil until soft, about 5 minutes.
- Add sliced sausage, Cajun seasoning, and bay leaves; cook until sausage starts to brown.
- Stir in soaked beans and chicken broth. Bring to a simmer.
- Reduce heat and let it simmer for 1 to 1.5 hours until beans are tender; stir occasionally.
- Serve over cooked rice and add hot sauce if desired.
