  • 3 cloves garlic (minced)
  • 1 cup bell peppers (chopped, any color)
  • 1 cup tomato sauce
  • 2 tsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. In a large skillet over medium heat, heat olive oil. Add chopped onions and bell peppers; sauté until softened, about 5 minutes.
  2. Increase heat to medium-high; add ground beef. Cook until browned, breaking it apart with a spatula (8-10 minutes).
  3. Stir in minced garlic, paprika, cumin, salt, and pepper; cook for another 1-2 minutes until fragrant.
  4. Add rinsed rice and tomato sauce; stir well to combine.
  5. Pour in water according to rice package instructions (about 1 ½ cups). Bring to a boil, then reduce heat to low. Cover and simmer until liquid is absorbed and rice is tender (about 20 minutes).
  6. Optional: top with cheddar cheese before serving.
