- 1 lb lean ground beef
- 1 cup long-grain white or brown rice (rinsed)
- 1 medium onion (finely chopped)
- 3 cloves garlic (minced)
- 1 cup bell peppers (chopped, any color)
- 1 cup tomato sauce
- 2 tsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- ½ cup shredded cheddar cheese (optional)
Instructions
- In a large skillet over medium heat, heat olive oil. Add chopped onions and bell peppers; sauté until softened, about 5 minutes.
- Increase heat to medium-high; add ground beef. Cook until browned, breaking it apart with a spatula (8-10 minutes).
- Stir in minced garlic, paprika, cumin, salt, and pepper; cook for another 1-2 minutes until fragrant.
- Add rinsed rice and tomato sauce; stir well to combine.
- Pour in water according to rice package instructions (about 1 ½ cups). Bring to a boil, then reduce heat to low. Cover and simmer until liquid is absorbed and rice is tender (about 20 minutes).
- Optional: top with cheddar cheese before serving.
