Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tbsp olive oil (extra virgin)
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tbsp fresh rosemary (chopped)
  • 1 tbsp fresh thyme (chopped)
  • Salt & pepper to taste
  • Juice of 1 lemon (plus zest)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. Rub olive oil over the entire chicken, then season generously with salt, pepper, garlic powder, onion powder, rosemary, and thyme—don’t forget inside the cavity!
  4. Squeeze lemon juice over the chicken and place half of the squeezed lemon into its cavity.
  5. Roast in a roasting pan for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let it rest for 10-15 minutes before carving.
