- 1 whole chicken (about 4–5 lbs)
- 2 tbsp olive oil (extra virgin)
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tbsp fresh rosemary (chopped)
- 1 tbsp fresh thyme (chopped)
- Salt & pepper to taste
- Juice of 1 lemon (plus zest)
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the chicken under cold water and pat dry with paper towels.
- Rub olive oil over the entire chicken, then season generously with salt, pepper, garlic powder, onion powder, rosemary, and thyme—don’t forget inside the cavity!
- Squeeze lemon juice over the chicken and place half of the squeezed lemon into its cavity.
- Roast in a roasting pan for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let it rest for 10-15 minutes before carving.
