  • 2 lbs Yukon Gold potatoes, peeled and diced
  • 1 lb Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup sour cream (or Greek yogurt)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • 1 tsp paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the sausage until fully cooked. Add diced onions halfway through cooking until they are translucent. Stir in minced garlic and spices, cooking until fragrant.
  3. In a large bowl, combine the sausage mixture with diced potatoes, sour cream, chicken broth, and half of the cheddar cheese. Mix until well-coated.
  4. Pour the mixture into a greased 9×13-inch baking dish. Top with remaining cheddar cheese.
  5. Bake uncovered for 45-50 minutes or until golden brown on top.
