- 2 lbs Yukon Gold potatoes, peeled and diced
- 1 lb Italian sausage, casings removed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup sour cream (or Greek yogurt)
- 1 cup shredded sharp cheddar cheese
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
- 1 tsp paprika
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, brown the sausage until fully cooked. Add diced onions halfway through cooking until they are translucent. Stir in minced garlic and spices, cooking until fragrant.
- In a large bowl, combine the sausage mixture with diced potatoes, sour cream, chicken broth, and half of the cheddar cheese. Mix until well-coated.
- Pour the mixture into a greased 9×13-inch baking dish. Top with remaining cheddar cheese.
- Bake uncovered for 45-50 minutes or until golden brown on top.
