- 3 lbs brisket corned beef
- 1 medium green cabbage, quartered
- 4 medium carrots, cut into chunks
- 2 large sweet onions, sliced
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 tbsp black peppercorns
- 1 tbsp mustard seeds
- 2 bay leaves
- Fresh parsley for garnish
Instructions
- Season the corned beef generously and sear in a hot skillet until browned on both sides.
- Layer sliced onions, carrots, garlic, and cabbage in the slow cooker.
- Place seared brisket on top of vegetables and pour in beef broth until covered.
- Sprinkle peppercorns, mustard seeds, and bay leaves over the top.
- Cover and cook on low for 8-10 hours or until fork-tender.
- Slice against the grain before serving; garnish with fresh parsley.
