  • 1 lb sirloin or ribeye steak, cut into 1-inch cubes
  • 2 cups Yukon Gold or red potatoes, diced
  • 2 tsp garlic powder
  • 3 tbsp olive oil, divided
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh rosemary or thyme, chopped

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss potatoes with 2 tbsp olive oil, salt, and pepper on a baking sheet. Roast for about 20 minutes until golden brown.
  3. In a bowl, coat steak cubes with remaining olive oil, garlic powder, salt, pepper, and herbs. Let sit while potatoes roast.
  4. In a skillet over medium-high heat, sear steak bites for about 2–3 minutes on each side until browned.
  5. Combine roasted potatoes with steak in the skillet; toss gently and heat through for another 2–3 minutes.
  6. Serve hot on a platter garnished with fresh herbs.
