Ingredients
- 4 Tilapia fillets (about 1 pound)
- 2 large Red bell peppers
- 3 Garlic cloves, minced
- 3 tbsp Olive oil, divided
- ¼ cup Fresh basil leaves
- 1 tbsp Fresh lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 450°F (230°C). Slice red bell peppers in half and remove seeds. Place cut side down on a baking sheet.
- Roast peppers for about 20 minutes or until skins blister. Once cool, peel the skins off.
- In a skillet, heat 2 tablespoons of olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
- In a blender, combine roasted peppers, sautéed garlic, basil leaves, lemon juice, salt, and pepper; blend until smooth.
- Heat the remaining tablespoon of olive oil in the skillet over medium-high heat. Season tilapia with salt and pepper; cook for 3-4 minutes on each side until golden brown.
- Serve the tilapia topped with roasted pepper sauce alongside rice or pasta.
