- 2 cups chicken broth (or vegetable broth)
- 1 cup diced tomatoes (fresh or canned)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup chopped cilantro
- Juice of 1 lime
- Salt and pepper to taste
- 1 tsp chili powder (optional)
Instructions
- Heat a splash of oil in a large pot over medium heat. Sauté the chopped onions until translucent, about 5 minutes.
- Add minced garlic and diced tomatoes; cook until softened, about 4 minutes.
- Pour in the chicken broth and bring to a gentle boil. Add fideo noodles and cook according to package instructions until tender yet al dente.
- Season with salt, pepper, and optional chili powder to taste.
- Stir in chopped cilantro before serving. Serve hot with lime wedges on the side.
