- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup bell peppers (mix of red, yellow, green)
- 1 large yellow onion
- 3 cloves garlic
- 2 tsp cumin
- 1 tsp chili powder
- 2 tbsp olive oil
- 6 flour or corn tortillas
- 1 ripe avocado (optional)
Instructions
- Slice the chicken breasts into thin strips. Chop bell peppers and onion.
- In a bowl, mix cumin, chili powder, salt, and pepper. Coat the chicken strips evenly with this spice mix.
- Heat olive oil in a skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes until golden brown.
- Stir in bell peppers and onion; sauté for an additional 4-5 minutes until tender-crisp.
- Warm tortillas on another skillet or in the microwave.
- Assemble the fajitas by loading warm tortillas with the chicken-veggie mixture and add avocado slices if desired.
