- 4 Italian sausages (mild or spicy)
- 2 cups bell peppers (1 red, 1 yellow, 1 green), sliced
- 1 large sweet onion, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Prepare your ingredients: Slice bell peppers and onion; mince garlic.
- Heat olive oil in a skillet over medium-high heat. Add whole sausages and cook until browned (about 8-10 minutes).
- Remove sausages from skillet; add onions and bell peppers along with garlic. Sauté until softened (5-7 minutes).
- Slice cooked sausages into bite-sized pieces and return to the skillet with the veggies. Stir in Italian seasoning, salt, and pepper.
- Reduce heat to low; simmer for an additional 5 minutes for flavors to meld.
- Serve over pasta, rice, or in sub rolls, garnished with fresh parsley if desired.
