Ingredients
- Baby potatoes
- Unsalted butter
- Shredded cheese (sharp cheddar or mozzarella)
- Olive oil
- Salt and pepper
- Fresh herbs (optional)
Instructions
- Boil the baby potatoes in salted water for 15-20 minutes until fork-tender.
- Drain and let cool for 5 minutes.
- Smash each potato on a parchment-lined baking sheet using the bottom of a glass.
- Drizzle with olive oil and season with salt and pepper.
- Bake at 450°F (230°C) for 25-30 minutes until golden brown.
- In the last 5 minutes, sprinkle cheese on top and return to the oven until melted.
