- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fettuccine pasta
- 2 tbsp cajun seasoning
- 1 cup heavy cream
- 1 cup sliced bell peppers (red and green)
- 3 cloves garlic, minced
- 1 cup grated Parmesan cheese
Instructions
- Cook the fettuccine in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 2 tbsp olive oil over medium heat. Add seasoned chicken breasts and cook until golden brown on both sides and cooked through (about 6-7 minutes per side). Remove from skillet and let rest.
- In the same skillet, add garlic and bell peppers. Sauté for 3-5 minutes until fragrant.
- Pour in heavy cream, scraping the pan for flavorful bits. Stir in cajun seasoning and simmer gently for about 5 minutes until thickened.
- Slice the chicken and return it to the skillet along with the cooked pasta. Toss everything together until well-coated with the sauce.
- Finish with freshly grated Parmesan cheese before serving.
