- 1 lb beef sirloin, thinly sliced
- 8 oz rice noodles
- 1 can (14 oz) full-fat coconut milk
- 2 tbsp red curry paste
- 1 cup fresh cilantro, chopped
- 1 cup fresh basil, chopped
- Juice of 1 lime
- 4 cups low-sodium beef broth
- 1-inch piece of fresh ginger, sliced
- 4 cloves garlic, smashed
- 2 tbsp low-sodium soy sauce
Instructions
- Prepare the broth: In a large pot over medium heat, combine beef broth, ginger, garlic, and red curry paste. Simmer gently until fragrant.
- Stir in coconut milk and bring to a simmer.
- Add sliced beef sirloin and cook for 5–7 minutes until tender.
- Cook rice noodles according to package instructions; drain and rinse under cold water.
- Mix in fresh herbs just before serving and finish with lime juice. Serve hot.
