  • 8 oz rice noodles
  • 1 can (14 oz) full-fat coconut milk
  • 2 tbsp red curry paste
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh basil, chopped
  • Juice of 1 lime
  • 4 cups low-sodium beef broth
  • 1-inch piece of fresh ginger, sliced
  • 4 cloves garlic, smashed
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Prepare the broth: In a large pot over medium heat, combine beef broth, ginger, garlic, and red curry paste. Simmer gently until fragrant.
  2. Stir in coconut milk and bring to a simmer.
  3. Add sliced beef sirloin and cook for 5–7 minutes until tender.
  4. Cook rice noodles according to package instructions; drain and rinse under cold water.
  5. Mix in fresh herbs just before serving and finish with lime juice. Serve hot.
