Instructions
- Wash the berries gently and pat dry.
- In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract; mix until thickened but fluffy.
- In a trifle dish or glasses, layer sponge cake pieces, whipped cream, and mixed berries. Repeat layers until reaching the top.
- Decorate with remaining berries and mint leaves if desired. Chill in the refrigerator for at least an hour before serving.
