 - In another bowl, cream softened butter and sugar until light and fluffy (3-4 minutes).
 - Beat in the egg, lemon juice, lemon zest, and pink food coloring until fully combined.
 - Gradually add the dry ingredients to the wet mixture until just combined to avoid overmixing.
 - Drop rounded tablespoons of dough onto parchment-lined baking sheets about 2 inches apart.
 - Bake for 10-12 minutes until edges are golden but centers remain soft.
 - For the glaze, whisk powdered sugar with lemon juice until smooth; drizzle over cooled cookies.
