- 1.5 lbs boneless, skinless chicken thighs
- 1 cup ripe pineapple chunks
- 1 cup bell peppers (red and yellow), sliced
- 1 medium red onion, sliced
- 3 cloves fresh garlic, minced
- 1/4 cup low-sodium soy sauce
- 2 tbsp brown sugar
- 1/2 tsp dried ginger
- 2 tbsp fresh lime juice
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a bowl, whisk together soy sauce, brown sugar, ginger, and lime juice.
- In a large bowl, combine chicken thighs, pineapple chunks, bell peppers, red onion, and minced garlic. Pour marinade over the mixture and toss well.
- Spread the mixture evenly on the prepared baking sheet.
- Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
