  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 tsp dried oregano (or 1 tbsp fresh)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a large bowl or zip-top bag, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  2. Add the chicken breasts to the marinade and ensure they are thoroughly coated.
  3. Seal the bag or cover the bowl with plastic wrap and refrigerate for at least 30 minutes (preferably up to 4 hours).
  4. Preheat your grill to medium-high heat (around 400°F).
  5. Remove the chicken from the marinade and discard any leftover marinade.
  6. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F.
  7. Let the chicken rest for about 5 minutes before slicing and serving alongside your favorite sides.
