- 6 cups fresh kale, chopped
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup dried cranberries
- ¾ cup feta cheese, crumbled
- 2 tbsp olive oil
- Juice of ½ lemon
- Salt and pepper to taste
Instructions
- Rinse the kale under cold water and remove tough stems. Tear leaves into bite-sized pieces.
- In a large bowl, drizzle kale with olive oil and sprinkle with salt. Massage the leaves for about two minutes to soften.
- Add cherry tomatoes, cucumber, and red onion; mix well.
- Fold in dried cranberries and feta cheese gently.
- Squeeze lemon juice over the salad, season with salt and pepper to taste, and toss again before serving.
