Ingredients

Scale
  • 6 cups fresh kale, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced

  • 2 tbsp olive oil
  • Juice of ½ lemon
  • Salt and pepper to taste

Instructions

  1. Rinse the kale under cold water and remove tough stems. Tear leaves into bite-sized pieces.
  2. In a large bowl, drizzle kale with olive oil and sprinkle with salt. Massage the leaves for about two minutes to soften.
  3. Add cherry tomatoes, cucumber, and red onion; mix well.
