- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup white chocolate, melted
- 1 cup coconut cream (chilled)
- ½ cup granulated sugar
- 3 large eggs (room temperature)
- 1 cup pineapple chunks (fresh or well-drained canned)
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter and press firmly into the bottom of a springform pan.
- Melt white chocolate in a microwave-safe bowl in 20-second intervals until smooth; set aside.
- Beat cream cheese until fluffy. Gradually add sugar, then mix in melted white chocolate, chilled coconut cream, eggs, and vanilla extract until smooth.
- Gently fold in pineapple chunks and pour the mixture over the crust.
- Bake for 55-60 minutes until set but slightly jiggly in the center. Cool at room temperature before refrigerating for at least four hours or overnight.
- Serve garnished with extra pineapple or whipped cream.
