- 1 lb beef sirloin, thinly sliced
- 8 oz fresh mushrooms, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 cup sour cream
- 1 cup low-sodium beef broth
- 8 oz egg noodles
- 1 tbsp all-purpose flour
- 2 tbsp butter and olive oil (combined)
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Prepare the egg noodles according to package instructions in salted boiling water until al dente; drain.
- In a large skillet, heat butter and olive oil over medium-high heat. Sear the sliced beef for about 4 minutes until browned. Remove and set aside.
- In the same skillet, sauté onions and garlic until translucent (3-4 minutes).
- Add mushrooms and sprinkle flour; cook for an additional 2 minutes.
- Pour in beef broth, scraping up any bits from the pan. Stir in sour cream and paprika; let simmer for 5-7 minutes until thickened.
- Combine cooked noodles with the beef mixture; serve hot.
