- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cups fresh romaine lettuce, chopped
- 1 cup Caesar dressing (homemade or store-bought)
- 1/2 cup freshly grated Parmesan cheese
- 4 slices whole wheat bread or ciabatta rolls
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until cooked through.
- If making homemade dressing, whisk together mayonnaise, minced garlic, lemon juice, anchovy paste, Worcestershire sauce, salt, and pepper in a bowl until creamy.
- In a large bowl, toss chopped romaine with Caesar dressing until evenly coated.
- Assemble the sandwich: Layer dressed lettuce on one slice of bread, top with sliced grilled chicken, and sprinkle with Parmesan cheese. Add another slice of bread on top.
- Optional: Drizzle extra dressing on the inside before cutting the sandwich in half.
