- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté the chopped onions and minced garlic until soft and fragrant.
- Add the diced tomatoes to the pot and cook for about 10 minutes until they start to break down.
- Pour in the vegetable broth and bring everything to a gentle simmer for about 20 minutes.
- Stir in sugar, salt, and pepper; adjust seasonings to taste.
- Blend the mixture until smooth using an immersion blender or standard blender (let cool slightly if using a standard blender).
- Just before serving, stir in fresh basil for an aromatic finish.
