- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 medium onion, diced
- 1 cup low-sodium chicken broth
- 1 cup BBQ sauce (your favorite variety)
Instructions
- Rinse the chicken breasts under cold water, pat dry with paper towels, and season generously with salt and pepper.
- In a large skillet over medium heat, heat 2 tablespoons of oil. Sauté the diced onion and minced garlic until translucent and fragrant.
- Add the seasoned chicken to the skillet and pour in enough chicken broth to cover half of the chicken.
- Cover the skillet, reduce heat to low, and simmer for 30-40 minutes until the chicken is tender and shreds easily with a fork.
- Remove the chicken from the skillet and shred it using two forks. Mix in your favorite BBQ sauce until fully coated.
- Serve on buns, in tacos, or over rice with desired garnishes like pickles or coleslaw.
