- 1 can (15 oz) organic chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/2 small red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Rinse and drain the chickpeas thoroughly.
- Dice the cherry tomatoes and cucumber into bite-sized pieces.
- Finely chop the red onion; soak in cold water for 10 minutes if needed.
- In a large bowl, mix together chickpeas, tomatoes, cucumber, onion, and parsley.
- Drizzle with olive oil and lemon juice; season with salt and pepper.
- Toss gently to combine; serve immediately or chill for 30 minutes.
