  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas thoroughly.

  3. Finely chop the red onion; soak in cold water for 10 minutes if needed.
  4. In a large bowl, mix together chickpeas, tomatoes, cucumber, onion, and parsley.
