- 8 oz fusilli pasta
- 1 ½ cups halved cherry tomatoes
- ¼ cup extra virgin olive oil
- ¼ cup fresh basil, chopped
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup grated Parmesan cheese
- 2 tbsp freshly squeezed lemon juice
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add fusilli and cook until al dente (8-10 minutes). Drain and return to the pot.
- Prepare the Dressing: In a bowl, whisk together olive oil and lemon juice. Season with salt and pepper.
- Combine: While the pasta is warm, add cherry tomatoes and basil to the pot. Pour dressing over the mixture and toss gently.
- Add Cheese: Sprinkle in grated Parmesan while stirring to combine.
- Chill: Let cool for 15 minutes before refrigerating for at least 30 minutes. Serve chilled or at room temperature.
