  • 2 cups water
  • 1 tablespoon turmeric powder
  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • Juice of 1 lemon
  • Fresh cilantro or parsley (for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine rinsed rice, water, turmeric powder, and salt; bring to a boil over medium heat. Reduce heat, cover, and simmer for 15-20 minutes until water is absorbed.
  3. While the rice cooks, marinate chicken in olive oil, minced garlic, lemon juice, salt, and pepper for at least 20 minutes.
  4. Preheat the grill or grill pan over medium-high heat. Grill chicken for about 6-7 minutes per side until fully cooked (internal temperature should reach 165°F/75°C).
  5. Once the rice has absorbed all water, fluff it with a fork and mix in chopped cilantro or parsley.
