Ingredients
- 1 cup long-grain rice
- 2 cups water
- 1 tablespoon turmeric powder
- 3–4 boneless, skinless chicken breasts
- 2 cloves fresh garlic (minced)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- Juice of 1 lemon
- Fresh cilantro or parsley (for garnish)
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, combine rinsed rice, water, turmeric powder, and salt; bring to a boil over medium heat. Reduce heat, cover, and simmer for 15-20 minutes until water is absorbed.
- While the rice cooks, marinate chicken in olive oil, minced garlic, lemon juice, salt, and pepper for at least 20 minutes.
- Preheat the grill or grill pan over medium-high heat. Grill chicken for about 6-7 minutes per side until fully cooked (internal temperature should reach 165°F/75°C).
- Once the rice has absorbed all water, fluff it with a fork and mix in chopped cilantro or parsley.
- Serve grilled chicken alongside turmeric rice and drizzle with extra lemon juice if desired.
