Ingredients

  • 2 cups fresh broccoli florets (about 150g)
  • 2 cups fresh cauliflower florets (about 150g)
  • 1/2 cup red onion, thinly sliced (about 75g)
  • 1/2 cup dried cranberries (about 60g)
  • 1/4 cup sunflower seeds (about 30g)
  • 1/2 cup mayonnaise (120g)
  • 2 tbsp apple cider vinegar (30ml)
  • 1 tbsp honey or agave syrup (15ml)
  • Salt and pepper to taste

Instructions

  1. Rinse broccoli and cauliflower under cold water and pat dry.
  2. Cut the broccoli and cauliflower into bite-sized florets.
  3. Thinly slice the red onion.
  4. In a large bowl, mix the chopped broccoli, cauliflower, onion, cranberries, and sunflower seeds.
  5. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth.
  6. Pour the dressing over the salad mixture and toss gently until well-coated.
  7. Serve immediately or refrigerate for about 30 minutes to enhance flavors.
